The story behind it

Takemoto Yushi has been pressing oil in Gamagori, Aichi, since the Edo period, and taihaku sesame oil is its signature. Unlike ordinary sesame oil, the seed is pressed raw and unroasted, so the oil is colorless and has almost no aroma.

Because it does not assert itself through aroma, it brings out the flavor of the ingredients. Pressing also makes it heat-tolerant and slow to oxidize. It fits everything from Japanese deep-frying to Western pastry.

How to use it
