The story behind it

Ninben was founded in 1699 as a katsuobushi dealer in Nihonbashi, Edo. For more than three hundred years it has stayed with katsuobushi and dashi.

Shirodashi is a concentrate: a combined dashi of katsuobushi, saba-bushi, soudagatsuo-bushi, and kombu, with usukuchi shoyu (lighter in color, higher in salt). Because the color is pale, you can set a solid savory flavor while leaving the color of the ingredients intact. It is a dependable ally on days with no time to draw dashi.

Dilute it and simmered dishes and clear soups are settled. Dashi know-how carried down from Edo, concentrated into one bottle.

How to use it

Dilute with hot water for clear soup or chawanmushi. Also for seasoning simmered dishes, dashimaki tamago, udon broth, and quick pickles. Add it a little at a time to reach the strength you want.
