
Tenyo Bimisan Dashi Tsuyu (テンヨ だしつゆビミサン)
The story behind it
There is a bottle you will find in almost any Yamanashi kitchen: Bimisan. Since its release in 1964 it has handled houtou, simmered dishes, and tempura dipping sauce for Koshu home cooking.
It is made by Tenyo Takeda, which traces back to a shoyu (soy sauce) brewery started in Kofu in 1872 by a descendant of Nobutora, the father of Takeda Shingen. The name Tenyo, meaning heaven-given, comes from the story of Shingen receiving salt from his rival Uesugi Kenshin and sharing it with his people as heaven-given salt.
The company's own honjozo shoyu is combined with dashi from katsuobushi and souda-bushi. A tsuyu that carries "send salt to your enemy" in its name supports Yamanashi's soul food.
How to use it
For houtou, simmered dishes, dipping sauce, and rice bowls. It is a 5x concentrate. In Yamanashi this one bottle covers both tempura sauce and noodle broth.
