The story behind it

In Aomori, Gen Tare usually means the one with the red label. This is the bottle sitting next to it.

It comes from the same company, Kamikita Nosan Kako, which started in Towada in 1952. The main difference from the red label is the ingredient list: there is no shoyu (soy sauce) in this one. Salt, sugar, garlic, pepper. The garlic is grown in Aomori Prefecture.

Without shoyu, it does not darken as it cooks. For chicken, lamb or a vegetable stir-fry, anything where you do not want a deep browned color, this suits better than the red label. They sit on the shelf under the same name, but you should choose between them as two different things.

How to use it

Use it for salt-grilled dishes, chicken and lamb. It also seasons vegetable stir-fries and fried rice. Good for dishes that a shoyu-based sauce would darken too much.
