What sets Tohoku's seasonings apart

Tohoku's seasonings have fermenting and preserving at their core, because the winter is long and has to be crossed. The red, salty Sendai miso. Shottsuru, a fish sauce brewed from the hatahata (sailfin sandfish) landed off Oga. The dashi shoyu (soy sauce) of Yamagata.
