Story
The story behind it
Yonezawa in Yamagata, the castle town of the Uesugi clan. Hirayama Magobee Shoten is said to have been brewing shoyu and miso here since the Meiji era, and this is their local all-purpose sauce.
Shoyu is the base, with bonito dashi cutting cleanly through a sweet-savory balance. Locals reach for it as a yakiniku sauce, but also for simmered dishes, stir-fries and even rice with raw egg.
It is the bottle Yonezawa households mean when they say they have everything they need.

How to use it
Use it as yakiniku sauce or to season a stir-fry. Also for simmered dishes, rice with raw egg, or as a dipping sauce for gyoza. The dashi means one bottle pulls the flavor together.
