Story
The story behind it
Ask about Aomori home cooking and the answer is shoga-miso oden: piping hot konnyaku and daikon coated in a sweet, salty ginger miso sauce. It is what winter tastes like in the Tsugaru region.
Kanesa, a maker in Aomori City, put that sauce in a jar so you can have it at home without making it from scratch. Rice miso is the base, with ginger, sugar and mirin worked in. The result is deliberately strong, the kind of flavor that keeps you reaching for more rice or another drink.
It comes from a place with hard winters, and it warms you from the inside out.

How to use it
Spoon it generously over oden. It also works on simmered daikon, konnyaku, grilled rice balls, chilled tofu and dengaku. Loosen it with a little hot water and it becomes a dipping sauce as is.
