Story
The story behind it
Sendai is known for grilled beef tongue. Here the tongue is cut into generous chunks and set into a Sichuan-style chili oil, heavy on spices, so you eat the pieces rather than just the oil.
It is made by Jinchu, a Sendai maker that has worked with beef tongue for years. Sesame oil, fried garlic and dried shiitake stack up behind it, so a spoonful over rice is a dish in itself.
One bite and you have Sendai on the table. It is a standard souvenir for a reason.
How to enjoy
How to use it
Spoon it over freshly cooked rice. Also good on chilled tofu, gyoza, fried rice or as a ramen topping. Add it at the end of a stir-fry for extra aroma and depth.
