Kyushu miso soup tastes faintly sweet because barley miso, brewed with barley koji, is the norm here.
Goteishu is the best-selling product at Hoshisan, founded in 1906 in the Tatsuda district of Kumamoto City. The aroma of barley koji comes up sweet, the color is pale, and the miso soup it makes is light on the palate. This is what home cooking tastes like in Kyushu.
If your palate is used to rice miso, you will notice the difference in the first mouthful. The sweetness of barley is not the sweetness of sugar. The koji makes it.

How to use it
Use it for miso soup. Even with restrained dashi, the sweetness of the barley koji carries the flavor. Also good in miso-dressed cucumber or eggplant, and in dengaku.
