Story
The story behind it
Hoshisan, founded in 1906 in the Tatsuda district of Kumamoto City, makes Nitaki Ichiban: shoyu (soy sauce) combined with dashi and sweetness, built for simmered dishes.
Nikujaga, a marinade for karaage, simmered fish, sukiyaki. Instead of measuring out shoyu, mirin, sugar and dashi separately, one bottle settles it. The seasoning has the sweetness typical of Kyushu, and it has been a fixture in Kumamoto for a long time.
It is also a practical answer to a contradiction: the more seasonings you own, the more of a chore cooking becomes.
How to enjoy
How to use it
Use it straight in simmered dishes and stir-fries, no dilution needed. Rub it into chicken for karaage and the flavor goes all the way in.
