
Ago-iri Hyoshiro Dashi (あご入兵四郎だし)
The story behind it
This is a Japanese-style dashi pack built around ago, or flying fish, from Aji no Hyoshiro in Chikushino, Fukuoka. Kyushu has long used fragrant ago dashi for celebrations and for New Year cooking.
Yaki-ago (grilled flying fish) is combined with katsuobushi, kombu, shiitake, sardine, and other domestic ingredients, then ground and packed into paper sachets. Tear one open and the contents work either as a dashi or as a seasoning straight from the bag.
A first-draw dashi of restaurant quality, at home, without the labor. This is a box for people who refuse to give up the aroma of yaki-ago and kombu on a busy day.
How to use it
Drop a pack into water and simmer a few minutes for a proper dashi for miso soup, simmered dishes, or udon broth. Tear the bag and sprinkle the contents directly to season fried rice or tamagoyaki.
