The story behind it

The Soya Strait, at the northern tip of Japan. This salt comes from a cold, clean sea filled with nutrients carried in by drift ice.

Soya no Shio is made by drawing seawater filtered up from the seabed, concentrating it, and spraying it onto a heated drum so that only the water leaves. Magnesium content exceeds 3,000mg per 100g, among the highest in the country. It is certified as a Wakkanai Brand product.

Salmon, scallops, potatoes. A salt raised in the same sea as the bounty of the northern land shows its best when paired with Hokkaido ingredients. A pinch of the strength of the farthest sea.

How to use it

Use it to prep seafood such as salmon and scallops. Sprinkled on butter-topped potato, it completes a Hokkaido classic. Also good as a finish for ramen broth.
