Story
The story behind it
Kochi Prefecture is known for growing ginger. Shikoku Kensho's Bannou Okazu Shoga is Kochi-grown ginger, chopped and steeped in a sauce of soy sauce, sugar, salt and brown rice vinegar.
There is no grating or chopping to do. Take it out of the bag and use it as is. On rice it works as a side dish, and added to stir-fries or grilled dishes, the ginger and its sauce season the dish on their own.
It is made by Shikoku Kensho Co., Ltd. in Kochi, and is sold at the local airport, souvenir shops and online.
How to enjoy
How to use it
Use it in place of sauce for pork ginger stir-fry (shogayaki). Mix it into fried rice, rolled omelet or okonomiyaki, or eat it as is on cold tofu or freshly cooked rice.
