Ryoshimachi Salt (漁師町ソルト)
The story behind it
Nakatosa is a fishing town on Tosa Bay, in the middle of Kochi's coastline. It is known for pole-and-line bonito fishing, and life here has long revolved around the port of Kure.
Ryoshimachi Salt ("fishing-town salt") is a fully sun-dried salt made by Shimpei Ogawa, a young salt maker in the town. The only ingredient is Nakatosa seawater. No fire and no machine heat are used: the salt crystallizes from the seawater by the power of the sun and the work of human hands.
The crystals are large enough to crunch. Saltiness comes first, then a sweetness and savory depth. It is an original product of Michi-no-Eki Nakatosa, the town's roadside station that supports local producers, and comes in a 15g pocket size you can carry.
How to use it
A pinch on seared bonito (katsuo no tataki) or steak. Also good on roasted vegetables with olive oil, or to finish a stew. The shop even suggests a little on vanilla ice cream.
