Marukyo Sampler: Sashimi Soy Sauce, Soda-Bonito Tsuyu, Yuzu Ponzu
The story behind it
Marukyo Miso Shoyu is a brewery in Susaki, a port town of about 20,000 people in Kochi. It was started by a handful of people in the Taisho era (1912 to 1926). The name Marukyo, written with the character for "together," carries the wish that everyone share in good food together.
About 30 years ago, with no successor in sight, the brewery was set to close. Customers kept asking it to carry on, and the brewery says those voices are what kept it going. It still makes soy sauce and miso as the same small brewery it was in the Taisho era.
This set brings together three of its products in 150ml bottles: a sashimi soy sauce, a tsuyu made with soda-bonito flakes, and a yuzu ponzu with fragrance and depth. The bottles are small enough to keep on the table, take camping, or bring as a small gift.
How to use it
Sashimi soy sauce for seared bonito or sashimi. The tsuyu for chilled tofu, somen noodles, or simmered dishes. The yuzu ponzu for hot pot, grilled fish, or mizutaki.
