Umaji Zushi no Moto (馬路ずしの素)
The story behind it
Umaji is a mountain village in eastern Kochi Prefecture that has grown and processed yuzu as a whole community. For celebrations such as school entrance, births or an 88th birthday, villagers have long made sushi with the yuzu vinegar they press and store each autumn.
In towns, sushi vinegar is made from rice vinegar, sugar and salt. In Umaji, yuzu juice is added too. Every household has its own recipe, passed down little by little from the village's best cooks.
Umaji Zushi no Moto lets you make the village's sushi easily. The yuzu is grown in Kochi. Mix 40 ml into one cup (about 150 g) of freshly cooked rice for sushi rice with a yuzu aroma and a gentle tartness.
How to use it
For chirashi-zushi and rolled sushi. Try it Umaji-style, mixed with chopped ginger and small dried fish. It also works as a dressing for sweet-pickled daikon, vinegared salads and nanban-zuke.
