The story behind it

Taiko Shoyu stands in Mihonoseki, a port town at the eastern tip of the Shimane Peninsula in Matsue, about a two-minute walk from Miho Shrine. Since its founding in 1890, the shop has carried on its traditional methods of making soy sauce.

Its signature "Miho Taiko" kanro shoyu is finished by slowly simmering aged soy liquid in a large cauldron. The shop recommends it above all as a soy sauce for sashimi.

This 200ml size comes in an anti-oxidation bottle that keeps air out after opening, so the flavor changes less as you use it little by little at the table.

At the shop itself, its soy sauce ice cream, made with the house soy sauce in four flavors (soy sauce, matcha, sesame, and moromi), is also well known.

How to use it

Pour straight over tuna or white-fish sashimi. The shop says it also works with meat dishes and fried foods, so try a little on karaage or tonkatsu.
